JCer Restaurant was founded with the goal of bringing the decandent Huaiyang cuisine to Montreal. With our unique touche on Chinese food, you are guaranteed to live an unprecedented culinary experience.
The Huaiyang cuisine roots back to the pre-Christian era and was developed around the cities of Yangzhou, Huaian and Zhenjiang. Nowadays, the Huaiyang cuisine finds its place amongst one of the “Four Great Traditions” that dominate the culinary heritage of China, along with Cantonese cuisine, Shandong cuisine and Sichuan cuisine.
It is characterized by the importance allocated to ingredients. They must be fresh, local, seasonal, and of high quality. The result of cooking with such ingredients is a light and meticulous dish, in contrast to the more “brash” eating styles of northern China.
